Not Your Usual Cup of Strawberries

It's February 29th - a leap day in a leap year. This is a day to do something you normally would not do. Today is the day to be extremely original, extremely extravagant, or extremely funny, especially since it is a Monday and since for many people Mondays usually mean return to normality after a fun weekend.


I made an unusual breakfast salad. My husband did not even try it. Not because it was bad, but because it wasn't "his" cup of strawberries. It was definitely mine! For breakfast!

~ Strawberries with Black Pepper and Balsamic Vinegar ~

Ingredients: 
  • 2 cups ripe organic strawberries
  • 2 Tbsp aged balsamic vinegar
  • 1 Tbsp raw honey
  • 1 tsp virgin olive oil 
  • 1/2 Tbsp freshly ground black pepper
  • pinch pink Himalaya salt


Method:
  • Wash and hull strawberries. Many people love to leave the leaves on strawberries. I personally do not. 
  • Cut each strawberry into quarters and toss them into a bowl.
  • In a small bowl whisk the dressing using all dressing ingredients. Use more honey if you prefer your salad to be really sweet.
  • Pour the dressing over chopped strawberries and mix well.
  • Serve in small cups or glasses and enjoy in good company!

Tip: Strawberry leaves can be eaten, but when strawberries are freshly picked, the green leaves contain hydrogen cyanide that strawberries exude as a deterrent to pests. In other words, they don't want to be eaten. Hydrogen cyanide does not penetrate the berries and is concentrated in the calyx. Eventually, hydrogen cyanide will dissipate. When the leaves are fully dried, however, they can be used to brew tea. Tannins in dried strawberry leaves may help alleviate upset stomach.


Ripe organic strawberries are one of the healthiest, tastiest foods that come to us in abundance in spring. They are rich in vitamin C and manganese, and contain significant amounts of anthocyanins, flavonols, phenolic acids, copper, iodine, potassium, phosphorus, magnesium, vitamin B6, biotin, folate, omega-3 fatty acids, and fiber. They have a rather law glycemic index (GI) of 40, and glycemic load (GL) of 3.6 per cup which means that they will not cause immediate blood glucose spikes.

Remember to always buy organic strawberries and wash them well! They are on top of the "dirty dozen" list. Also keep in mind that they are extremely perishable. They not only spoil quickly, but their vitamin C content dissipates with storage.

Raw Bircher Muesli

For many people who recently switched to raw food breakfast often presents a dilemma. A piece of fruit or a smoothie may not be enough. So, what to eat?


One of the nicest and rather healthy option is a Bircher muesli, or a raw overnight porridge. It is very easy to make and nutritious. Bircher muesli was created in early 1900s by a Swiss physician and nutritionist Maximilian Bircher-Benner, who wished to improve gastrointestinal health of his patients and provide them with a healthy breakfast alternative.

Ingredients:
  • 1 cup raw oatmeal
  • 1 tsp chia seeds
  • 1 1/2 cup raw almond milk
  • 1/4 cup raisins
  • 1/2 cup activated almonds or hazelnuts, roughly chopped
  • 1 tsp raw honey
  • 1/2 grated pear
  • 1/2 grated apple
  • 2-3 sliced fresh strawberries
  • 1 Tbsp freshly pressed lemon juice
  • pinch cinnamon 
  • pinch pink Himalaya salt


Method:
  • Place raw oats and chia seeds in a bowl.
  • Pour raw almond milk into a bowl and mix well. Add raisins and chopped nuts, and mix again. Cover the bowl and place it in a fridge overnight.
  • In the morning, add honey, lemon juice, salt and cinnamon. Mix well. Add more almond milk if you find the mixture too thick. 
  • Add grated pear and apple, and sliced strawberry. Mix again. 
  • Serve in individual bowls and enjoy in good company!

Tip: Expand your repertory and try muesli with freshly grated carrot and freshly grated ginger; goji berries or fresh blueberries and sliced banana; dried or fresh cherries; or pineapple, coconut, and mint. To prevent fruit from turning sour, always add the fruit in the morning.

Aphrodisiac Heart Cookies for St. Valentine's Day

To make these delicious cookies you will need juice pulp from my previous recipe and a dehydrator. You can, of course, use any leftover juice pulp or blend fruits and vegetables of your choice, but then, you will have to adjust the amounts of ingredients accordingly.


Take note: as with any juice pulp recipes, the outcome depends on the quality and moisture content of the juice pulp. If the juice pulp is too dry, you may have to add moisture to it. And if you do not have a dehydrator, you can use your oven at the lowest possible temperature. Keep the oven doors open to maintain low temperature if you want your cookies to be raw, otherwise bake them as if you baked regular cookies.

Ingredients:

for the cookie dough
  • 3 cups juice pulp
  • 10 dates, soaked until soft and pitted
  • juice of 1 blood orange
  • 3 Tbsp raw honey
  • 1 tsp açai powder
  • 1 tsp ground cardamom
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 Tbsp maca powder
  • 1 tsp vanilla extract
  • 1/2 tsp pink Himalaya salt
  • 1/2 cup coconut flour
  • 4 Tbsp virgin coconut oil, melted

for the chocolate ganache
  • 1 1/2 cup raw cacao powder
  • 1 raw cacao butter
  • 1/3 cup raw honey 
  • 1 tsp vanilla extract
  • 5-8 drops of food grade essential rose oil
  • pinch pink Himalaya salt
  • 1/2 tsp lecithin powder


Method: 
  • In a food processor or a blender process juice pulp, dates and lemon juice until well blended. Add spices and honey and process again. 
  • Transfer the mixture to a large mixing bowl. Add melted coconut oil and coconut flour, and mix well into a smooth dough. You can, of course, do this in a food processor or a blender, but I find that mixing by hand allows you to get the right consistency of the dough. Allow the dough to rest for a few minutes.
  • Roll out the dough on a flat surface. The dough should be about 1/4 inch thick.
  • Using a heart-shaped cookie cutter cut out cookies. Using a cookie spatula transfer cookies onto a dehydrator trays. Dehydrate at 115°F for 12 hours.
  • Next day or when your cookies are nicely dehydrated and crisp, in a large bowl mix melted cacao butter, raw cacao powder, lecithin and honey. Add vanilla extract, salt and essential rose oil. Make sure that the chocolate ganache is liquid enough and easy to work with, but not too flowing or it will come off the cookies. To prevent ganache from hardening in the bowl, keep the bowl over pot with warm water.
  • Dip each cookie in chocolate and set it to dry on a parchment or a cooling cookie rack. Allow cookies to rest until the chocolate cools off and sets in. If the chocolate layer is too thin you may want to repeat this step. 
  • Place cookies in the fridge before serving for 15 minutes or so.
  • When cookies are ready place them on a platter and enjoy them in good company!
I am certain that this cookies will disappear quickly, but if you have to store them, keep them in the fridge. They will be good for another two or three days.


These cookies are perfect for people who like to increase their libido. The juice pulp I used in this recipe contains hot habanero pepper and turmeric root. Chili peppers contain capsaicin - a substance known to promote release of chemicals in the body that have been proven to increase heart rate and trigger release of endorphins. In India turmeric is considered to be an aphrodisiac. So are the spices I used - cinnamon, nutmeg and cardamon, and honey. Maca is another libido increasing ingredient widely used in Peru. And of course, chocolate! Raw cacao contains phenylethlamine that is known for its stimulating action and methylxanthines that increase the body's sensitivity to touch. Both chemicals help increase the sense of well being.

Anti-Inflammatory Juice Recipe for the Brave

Systemic inflammation is often called "the silent killer" and is considered one of the causes of premature aging and death. Thanks goodness there are foods and superfoods that can help us curtail inflammation. Adding them to your daily meals can reduce the risk of many chronic diseases caused by systemic inflammation.


I called this tasty juice a "juice for the brave" because of the amount of super hot habanero peppers that I used to make it. You will definitely feel the fire and it may even make you speechless for a while. The sensation does not dissipate right away so you may want to drink a glass of water afterwards. If you are used to hot foods, add more habanero if you like.

Ingredients:
  • 2-3 large beets
  • 2-3 large golden beets
  • 5-6 carrots
  • 2 habanero peppers (or other very, very hot peppers)
  • 2 large chunks of fresh turmeric root (at least thumb sized)
  • 2 Navel oranges (optional)
  • 2 sweet apples (optional)
  • 2 sweet pears (optional)

Method: 
  • Wash and clean all the ingredients. Peel if necessary.
  • Pass all ingredients through the juicer, pour into large glasses and enjoy in good company! 

Save the juice pulp for my next recipe. We are going to make cookies for St. Valentine's Day!


Tip: Make this juice as often as you can. You can replace turmeric with ginger or use both, add more apples or oranges, use more carrots or more beets to make the juice taste different every time you make it. And always remember to save the pulp and use it in other recipes.

Probiotic Smoothie with Blueberries and Açai

To make this deliciously healthy smoothie I used kefir. If you are a vegan, raw milk kefir probably will not be your first choice, but kefir can also be made out of nut milk or coconut water. No matter what medium you are using to make kefir, the final product will come with all the health benefits of fermentation including the probiotic bacteria that is vital to your digestive health.


Ingredients: 
  • 3 cups home-made kefir
  • 1 cup frozen blueberries
  • 1 Tbsp açai powder
  • 1 Tbsp raw honey
  • 1 tsp chia seeds (for garnish)
  • 1 tsp sprouted flax seeds (for garnish)

Method:
  • Pour kefir into your blender bowl. Add blueberries, açai powder and honey. Blend until smooth.
  • Pour smoothie into tall glasses, garnish with seeds and enjoy in good company!


If you decide to use water kefir you may want to add a ripe banana for texture. You may also want to skip the honey and use a sweetener of you choice. Remember, however, that raw honey will help you boost your immune system, especially now during the cold season. 

Probiotics in kefir support digestive health and help you maintain a healthy gut. As you may already know, healthy gut is absolutely vital for the health and well being of the entire human organism.
