Pretty In Purple Harvest Bowl


Poke bowls and donburis are great for serving a variety of ingredients in one bowl where different textures, flavors and colors come together on top of steamed rice. Raw food lovers can easily replace the steamed rice with raw rice alternatives like the raw cauliflower "rice" for instance. 

For my purple bowl I used "rice" made of raw parsnips and cranberries. Both the "rice" and the toppings can be prepped ahead of time and kept in the fridge overnight. 

 

Recipe serves 2

Ingredients:

for the "rice"

  • 2-3 parsnips, washed, peeled and roughly chopped - 2 cups
  • 1/4 cup fresh cranberries
  • 1/2 cup dried cranberries 
  • freshly pressed juice of 1/2 lemon 
  • 1/8 tsp pink Himalayan salt
  • 1 tsp freshly ground black pepper 

for the toppings

  • black heirloom carrots (deep purple in color) cut into strips or spiralized
  • purple cabbage, shredded
  • radicchio cut into wedges
  • watermelon radishes, cut into half rounds
  • purple microgreens
  • edible flowers 

Method:

  • Start by making the parsnip "rice". In a food processor pulse blend the chopped parsnips until they resemble large grains of rice. Add fresh and dried cranberries and blend again. Add the lemon juice, salt and pepper and blend until well combined but still nicely coarse. Set aside.
  • Toss the carrot strips with a little lemon juice, virgin olive oil, salt and black pepper. Set aside.
  • In a bowl mix the shredded purple cabbage with some virgin olive oil, Ceylon cinnamon, a little raw apple cider vinegar, salt and black pepper. Set aside. 
  • To assemble the bowl portion out the parsnip cranberry "rice".  Top with prepared black carrots, wedges of radicchio and the purple cabbage salad. Add sliced watermelon radishes, purple microgreens and edible flowers. Serve right away and enjoy it in good company!

 

This pretty purple dish is great on its own but it tastes even better with an extra dressing. Here are only some suggestions so I do not provide the complete recipes. Once you make the bowl you will know what it needs. I leave it up to you. 

Dressing on the side ideas 

honey mustard dressing

  • virigin olive oil
  • Dijon mustard
  • raw honey
  • lemon juice
  • salt and pepper to taste 

ginger tahini dressing 

  • virgin olive oil
  • lemon juice
  • nama shoyu or tamari
  • raw miso paste
  • raw tahini 
  • grated ginger 
  • salt and pepper to taste



Purple foods are not only pretty, they are also incredibly healthy and good for you.  They are rich in vitamins, minerals, fiber and antioxidant phytonutrients, especially the anthocyanins. Anthocyanins are believed to fight inflammation, boost the immune system and reduce the risk of chronic diseases such as cancer or diabetes. Many of these foods are in season right now. Put them on your menu as often as you can.
