Raw Peach Cobbler


Peaches in season! As far as I am concerned, there is no summer without a delicious raw peach cobbler. 

This is a simple variation of a classic peach cobbler recipe that only takes a few minutes to make. I used walnuts and almonds but you can use pecans or walnuts only. To sweeten this desert I used dates. No additional sweetener is needed. I also added lemon juice and lemon zest to brighten the flavor of this delicious raw treat. 



Ingredients:  

for the fruit layer 

  • 4 organic ripe peaches
  • pressed juice of 1/2 lemon
  • 5 soft medjool dates soaked in filtered water
  • about 1/2 cup water from soaking dates
  • 1 Tbsp melted virgin coconut oil 
  • 1/2 tsp vanilla extract 
  • pinch of Celtic sea salt to balance the flavors

for the crust 

  • 5 soft medjool dates 
  • 1 1/2 cup activated raw walnuts
  • 1/2 cup activated raw almonds
  • 1 Tbsp melted virgin coconut oil, optional  
  • 1 Tbsp Thai style coconut milk, optional 
  • 1 Tbsp Ceylon cinnamon 
  • 1/4 tsp cardamom 
  • 1 tsp vanilla extract 
  • 1/2 tsp lemon zest 
  • pinch Celtic sea salt to balance the flavors 

 


Method: 

  • Wash the peaches and slice them into thin wedges. If the skin on your peaches is too though you may want to peel it off before slicing. 
  • In a bowl, mix the sliced peaches with lemon juice.   
  • In a blender or the food processor make the sauce for the peaches. You can actually skip this step and use sliced peaches soaked in lemon juice only, but the sauce makes this dessert even tastier. Whiz 1 quarter of a peach with the soaked dates, water from soaking, coconut oil, vanilla extract and salt. Process until smooth. Pour the sauce over the sliced peaches and mix well. Set aside.
  • To make the crust pulse blend almonds and nuts in a food processor until they are broken to small chinks. Add the dates and blend together for a few seconds. Add coconut oil and coconut milk, if using, the lemon zest and the spices, and blend everything together into a crumbly, sticky mass. I like it chunky but you may want to blend it for a little longer to obtain a smoother texture. Adjust the taste as necessary. 
  • Transfer about half of the mass into a serving dish and spread it loosely to cover the bottom. Pour the prepared peach slices into the dish and spread evenly over the crust. Spread the remaining crumbly mass over the peach layer. 
  • The peach cobbler is ready and you can serve it right away or place it in the fridge for about 30 minutes before serving. Serve as is or with a scoop of a homemade vanilla nice-cream. Enjoy it in good company!

This is such an easy and versatile dessert. You can adjust this recipe to make any kind of cobbler using your favorite seasonal fruit. People with tree nut allergies can use sunflower seeds and raw rolled oats to make the crust.
