I hope that all of you started this year in good health. Keep up with your last year's resolutions to eat healthier foods, or make new ones for this year. Choose foods that support your immune system, balance your blood sugar, and help you maintain a healthy weight. Most importantly, keep a positive outlook on life.
If you decided to make the transition into a raw food lifestyle, do it slowly. Add more and more raw ingredients to your meals. Get used to the increased volume of fiber in your food and possible detox reactions before embracing the fully raw diet. A large raw salad is always a good idea. Combined with a nutritious home made dressing, even the simplest diet can make a very satisfying meal. Remember to use organic ingredients whenever you can.
~ Super Green Creamy Raw Salad Dressing ~
I created this dressing to help my husband detox and alkalize his body. I did not measure the liquids. I wanted the dressing to be very creamy and also use it as a dip for a large platter of crudites. You may want to make it a little more flowing. Measure your liquids adequately.
Ingredients:
- 2 ripe avocados
- 1 red onion
- 4 garlic cloves
- 1 jalapeño pepper (remove the seeds if you want to make it less hot)
- 1 cup chopped fresh cilantro, packed
- 1/2 tsp dried oregano
- 1/3 cup mixed super greens (wheat grass, oat grass, barley grass, moringa, spirulina, chlorella)
- juice of one lemon
- juice of one lime
- raw apple cider vinegar
- coconut water
- virgin olive oil
- Celtic sea salt and freshly ground black pepper to taste
Method:
- Peel and chop the ingredients where necessary.
- Toss all ingredients into a bowl of your blender and whiz on high speed. Add liquids according to your preference. Add salt and pepper and blend again.
- Pour the dressing over your salad or use it as a dip for a platter of veggies. Enjoy in good company!
