To celebrate I made a simple dish that is rather easy to make. All ingredients are in season, but you might have a difficulty to find fresh wasabi root. I bought mine online from a wasabi farm. It arrived very fresh and I intend to use it in a few more raw recipes.
If you want to try out this recipe but do not have fresh wasabi, use wasabi paste or powdered wasabi root. You will have to adjust the amounts of wasabi you are adding to the pea sauce. Work slowly until you find the perfect proportion and are satisfied with the taste.
Ingredients:
for the noodles
- 2 medium large zucchini
- 1 Tbsp freshly pressed lemon juice
- pinch Celtic sea salt
for the sauce
- 1 cup fresh or frozen peas (thawed)
- 3 Tbsp grated fresh wasabi root (use less if this seems too spicy)
- freshly pressed juice of 2 limes
- 1/2 tsp lime zest from organic lime
- 2 Tbsp virgin olive oil
- 2 Tbsp cold pressed sesame oil
- salt to taste
for the garnish
- fresh pea shoots
- edible flowers
Method:
- Make zucchini noodles using a spiralizer or a vegetable peeler. Toss the noodles into a large bowl, add lemon juice and salt, mix gently and allow to tenderize for a few minutes.
- In a blender whiz all the sauce ingredients into a creamy consistency. Taste and adjust the spiciness to your personal liking.
- Add about two table spoons of the sauce into a bowl with zucchini noodles and mix gently.
- Portion out the pasta. Add generous amount of the pea sauce. Garnish with pea shoots and edible flowers. Serve right away and enjoy in good company!
Tip: If you live in Japan, Hong Kong or Singapore, you can easily obtain fresh wasabi rhizome. If you live elsewhere and your local Japanese grocery store does not sell fresh wasabi, you can order fresh wasabi root online. There are wasabi farms in the United States (Oregon), Iceland, Poland, and New Zealand, and they will be grateful for your business.
