Green Velvet Salat Dressing


Something green, something fresh, very creamy, raw and vegan for this year's St. Patrick's Day salad! If you are still looking for inspiration, you may want to try it. 

I decided to use the flat leaf, Italian parsley in this recipe. This herb is often underestimated by raw foodies but it should not be. Parsley has been used for centuries in TCM, Ayurveda and in European herbalist traditions.  

Among other nutrients, parsley is very rich in vitamin C and contains the flavonoid compound apigenin. Research shows that apigenin has the potential to not only prevent some types of cancer but also to reduce their progression through the modulation of certain signalling pathways in affected cells. While more research has to be conducted, we all should be eating foods that could help us prevent disease. 

 


 

Parsley is very easy to grow so you can have the freshiest supply whole year long but precautions must be taken since parsley can cause photosensitivity. People with a known allergy to umbellifers or the plants from the Apiaceae family such as parsley, carrots, celery, cilantro, cumin and dill. There is also known cross-reactivity with birch pollen.  Those who suffer from birch pollen allergy should exercise caution. Also, pregnant women should not be consuming large amounts of parsley since the herb is known to stimulate uterine contractions.

 


Ingredients: 

  • 1 avocado
  • 1 cup fresh flat leaf parsley, roughly chopped
  • 1 Tbsp dried parsley 
  • 1 heaping tsp green superfoods such as barley grass, wheat grass, ashitaba or moringa  
  • 1 Tbsp raw nut butter (I used raw Siberian cedar nut butter)
  • 1 garlic clove, minced 
  • 1 small shallot, minced 
  • freshly pressed juice of 1 large lemon  
  • 1/2 tsp lemon zest from organic lemon
  • 1 Tbsp raw apple cider vinegar
  • 1/2 cup virgin oilive oil or cold pressed hemp seed oil 
  • Celtic sea salt and freshly ground pepper to taste 

Method: 

  • Using a small blender or a food processor, blend all the ingredients into a velvety smooth, thick dressing. You may need to add a couple of teaspoons of filtered water if the dressing is too thick. Adjust the taste as needed. 
  • Serve this delicious dressing with a simple salad of greens, leeks and cucumbers. Add edible flowers, wild herbs, microgreens, sprouted seeds and nuts, and enjoy it in good company! 

Note: To preserve nutrients and keep my dressing rawI mince and chop the ingredients before blending to minimize exposure to heat that may come from the blade of my blender. 

Tip: Use this basic recipe as a dip or a sauce for raw brugers. Add a few more wholesome ingredients and turn it into a tasty, health-promoting raw soup.
