Finger Lime Raw Vegan Sushi

Finger limes (Citrus australasica) are one of my favorite ingredients. Unfortunately, they are rather difficult to obtain. They are rich in vitamin C and very juicy. They are often called "citrus caviar" since their vesicles resemble caviar. I use them as a decorative topping on variety of sweet and savory dishes. Today it's cauliflower rice sushi maki. 

Ingredients:

for the "rice"

  • florets of 1 small cauliflower
  • freshly pressed juice of 1 lime, add more as needed
  • 1 Tbsp raw apple cider vinegar 
  • 1 Tbsp raw, unpasteurized white miso paste
  • pinch Celtic sea salt 

for the maki sushi

  • cucumber cut into wedges
  • avocado cut into wedges
  • real wasabi (Wasabia japonica) optional
  • nori sheets (get raw ones if you can)
  • 6-8 finger limes for topping
  •  nama shoyu (raw, unpasteurized soy sauce) for dipping

Method:

  • Make the sushi rice using food processor. Pulse blend the cauliflower florets until they resemble rice grains. Use cheesecloth to squeeze out excess water from the shredded cauliflower. Add lime juice, vinegar, salt and miso paste and mix into a fairly sticky mass. Adjust the taste to your personal liking.
  • Place a nori sheet on a flat surface. Use a sushi rolling mat (makisu) to help you roll the sushi. Place enough of the cauliflower rice to cover the nori sheet almost completely but leave about 1 inch on the top end uncovered. Place cucumber and avocado wedges in the middle. Add real wasabai, if using. Holding the nori sheet with two hands and pressing down the filling, roll out a fairly tight sushi roll. Make sure that you roll over to seal the end. Repeat the process. Continue until you used up all the cauliflower rice. 
  • Using a very sharp knife cut each roll in half, and each half into two halves. Arrange sushi on a serving platter.
  • Cut the finger limes in half and gently squeeze out the fruit flesh. Using a small spoon cover each sushi maki with the citrus caviar.
  • Serve right away with a raw soy dipping sauce and enjoy in good company!
