Creamy Raw Green Soup

This is one of the simplest raw soups you can make from scratch. You will need a generous bunch of herbs, a liquid base of your choice, and either zucchini, cucumber or avocado, to make the soup as thick as you wish. The proportions offered here are approximate at best. Your outcome, as always, depends on the type and quality of ingredients you choose. 
 
I grow my own herbs and I also forage wild growing ones. Wild herbs add a very special quality to raw food recipes, but if you have never foraged before and are not sure which herbs are edible and which are not, use only garden herbs to be safe. However, if you can safely identify wild herbs, stinging nettle, dead nettle (Lamium purpureum), wild garlic, dandelion, wild sorrel, are just perfect for this dish.

Ingredients:
  • 3-4 cups mixed fresh garden greens and wild herbs, roughly chopped
  • 1 cup liquid base of your choice (purified water, coconut water, almond milk)
  • 1 shallot or small onion, roughly chopped (optional)
  • 1 zucchini, chopped
  • 1 Tbsp virgin olive oil, or any other cold pressed oil (optional)
  • 1 Tbsp freshly pressed lemon juice
  • Celtic sea salt, freshly ground pepper, or seasoning of your choice, to taste

 
Method:
  • In a blender whizz herbs, zucchini and your liquid base into a creamy soup. Add lemon juice and olive oil, and whiz again.Taste and add salt, pepper and any seasoning you like. I used a pinch of my Best Raw Seasoning Ever
  • If you are satisfied with the outcome, portion out the soup and garnish it with edible flowers. Enjoy in good company! 


This light summer soup is meant to be eaten chilled. Those of you who prefer their soups warm, can warm it up. Just remember not to exceed 113°F or 45°C  if you want to preserve the enzymes. 
 
Tip: To enhance not only the green taste, but also the healing value of this soup you can add a scoop or two of green superfoods powder. Also, instead of zucchini you can use a home-made cashew cream. To make it use one cup water per one cup cashews.
