Halloween, Samhain, All Saint's Day, Dia de los Muertos... riots; elections in the USA; pandemic; lockdowns in Europe, New Zealand and Australia; an order from the governor of New Mexico for citizens to stay at home, issued only five days before the elections; and the year 2020 is not over yet.
This is a little too much for anyone, so you will have to forgive me that I am not sharing a detailed recipe, but only a suggestion.
I made these cookies in two ways: chilled and dehydrated. I used the same ingredients in different proportions. More fat for the chilled cookies; more coconut flour for the dehydrated ones. Adding a small amount of psyllium husk powder and sunflower lecithin will help to keep the dough ingredients together.
Ingredients you will need
- coconut flour
- almond butter
- vanilla bean
- ground cloves
- maple syrup
- Himalayan pink salt
- psyllium husk powder
- sunflower lecithin powder (optional)
- raw pecan nuts for the garnish
- and last but not least, willingness to experiment
Method:
I mixed the dough in a mixing bowl and let it sit for about thirty minutes. For each cookie I took about one teaspoon of dough, rolled into a ball, flattened with my thumb, and added a pecan nut.
Raw cookies and confections are very short lived. Make small batches and refrigerate in air tight containers. And always enjoy in good company!
