Hot! Hot! Hot out there! What could be better than a delicious homemade ice on stick on an incredibly hot day?
I made a smoothie in the morning and decided to freeze some for later. There is no recipe. I first juiced some lemongrass, ginger and limes, then added the juice into coconut water with a few drops of liquid stevia. I added a some coconut milk and a pinch of Celtic seas salt. I blended all the ingredients and was satisfied with the taste and texture. I poured the mixture into popsicle forms and allowed it to freeze in my freezer overnight.
If you like lemongrass, you will like this! You might have to experiment with proportions. Start with just one stalk of lemongrass and a small chunk of ginger. You can use lemons instead of limes, or use both. Use more coconut milk if you like a creamier ice cream, or skip the coconut milk to make a sorbet.
