We have been very lucky here in Roswell. The first four cases of the COVID-19 in the Chavez County were registered only two weeks ago. The entire state of New Mexico has at this point only 543 confirmed infections. This number will probably go up in the next few days since the tests are now available to more and more people.
In the first few days after the governor's announcement, people in Roswell emptied the stores of many storable goods. Bleach, toilet paper, canned beans, sliced bread, and eggs disappeared in an instant. Interestingly, one could still buy lettuce, tomatoes, bananas, citrus fruit, fresh and frozen berries, nuts, avocados, and so much more. As you can imagine, I was more than happy to see that I did not have to engage in food fights or worse.
All non essential businesses are to remain closed, and New Mexicans were asked to stay at home, practice social distancing, and wash hands as often as possible.
Shelves in grocery stores are now full of stuff again, but some items are being rationed to prevent hoarding. Like never before, many people realized how important it is to have a well-stocked pantry.
So, what do you do if you are a passionate raw foodie? You are probably better off than you think, unless there is absolutely nothing in the stores and all farmers' markets are closed.
Most raw food lovers can survive on seeds, nuts, nut butters, sprouts, and smoothies. If you have a dehydrator you can dehydrate fruits and vegetables and store them in tight containers. Nuts, seeds and grains can be stored for later use as well. Seeds and grains can be sprouted. Nuts can be used to make delicious nut butters, milk, sauces and dips.
If you still have access to fresh fruits and vegetables, make salads, juices, smoothies and raw soups as often as you can. Smoothie ingredients can be frozen for later use, of course.
Many of you probably use powdered superfoods, raw cacao, raw protein, raw honey, coconut oil, spices and herbs. All these ingredients can be used to make delicious energy bars, raw cakes and truffles.
Grow your own food, if you can. You can re-grow lettuce, celery, and spring onions. Even if you do not have a garden, terrace, patio, or balcony, you can still grow herbs, strawberries, or cherry tomatoes on your windowsill.
We are living in difficult times, no doubt, but for as long as you are healthy and practice social distancing, things are half as bad. Just remember that stress and fear negatively affect your immune system. Exercise in your home and lighten up. Positive attitude makes a big difference. And of course, make a large salad if you can.

~ Boston Lettuce With Avocado, Pink Grapefruit And Microgreens ~
Ingredients:
for the salad
- large head of Boston lettuce
- 2 avocados, sliced
- 1 pink grapefruit,cut into supremes
- 2 spring onions, thinly sliced
- 1/2 cup microgreens
for the dressing
- 1/3 cup freshly pressed pink grapefruit juice
- 1/3 cup virgin olive oil or other cold pressed oil
- 2 Tbsp balsamic vinegar
- pinch pink Himalayan salt
- freshly grind black pepper
Method:
- Whisk the vinaigrette.
- In a large salad bow gently mix all the salad ingredients. Boston lettuce is rather fragile so make sure that you do not squash the leaves unnecessarily.
- Add the vinaigrette to the salad bowl and mix gently. Serve right away and enjoy in good company!
Tips:
- If you do not know how to supreme citrus fruit, read my tutorial. It shows how to supreme an orange. Follow the instruction to supreme your pink grapefruit for this recipe. If this is too difficult for you, simply slice your grapefruit and cut the slices into bite-size chunks.
