Raw Sauerkraut Salad For The Flu Season

We are three weeks into a New Year already and I hope that your New Year's resolution to stay healthy is working for you despite the Polar Vortex and the almost unexpected return of winter. 


I follow a few simple strategies and haven't had a cold since 2015. Healthy nutrition has always played a big role in my anti-aging health program and I can assure you that there is no better medicine than a tasty dish loaded with immune system supporting nutrients.

 ~ Raw Sauerkraut Salad For The Flu Season ~

Ingredients:
  • 2 cups fresh, preferably raw, unpasteurized sauerkraut
  • 2-3 heirloom carrots, grated
  • 2 large garlic cloves, chopped
  • 1 small purple onion, chopped
  • 1 inch fresh ginger root, grated
  • 1/2 Tbsp dried chili flakes
  • 2 Tbsp virgin olive oil
  • 2 Tbsp Manuka honey (preferably raw) 


Method:
  • In a small bowl mix olive oil, Manuka honey and chili flakes for the dressing. 
  • Transfer sauerkraut into a large bowl and loosen it a bit with a fork. 
  • Add carrots, garlic, ginger, and onion. Mix well. 
  • Add honey olive dressing and mix again. The salad is ready and you can eat it right away. Enjoy in good company!

Tip: Add fresh chopped parsley or cilantro, or use fresh turmeric and cumin for a different gustatory experience. 

Why this salad is good for you

I used ingredients that are well known for their immune system support. In synergy they work magic.
  • Fermented foods such as sauerkraut can help you maintain intestinal homeostasis and strengthen your immune system;
  • Sauerkraut is also rich in vitamin C that helps the body fight colds;
  • Ginger and garlic have proven anti-microbial properties;
  • Onions are well known for their antibacterial and anti-inflammatory properties. Quercetin in onions helps fight free radicals and boosts immune system; 
  • Chili peppers have antibacterial properties, help prevent inflammation and improve blood circulation; 
  • Carrots are rich in beta carotene and pro-vitamin A that helps support impaired immune system;
  • Manuka honey has strong antibacterial properties and is also known to stimulate the immune system;
  • Olive oil is known to support immune system against bacteria and viruses. Fatty acids in olive oil help regulate inflammatory processes in the body and support immune system.

Prevention is better than cure. Simple foods in your pantry can help you stay healthy during the cold season. Also, keep in mind that stress negatively affects our immune system. Take some time out and pamper yourself.
