Marinated Pears In Raw Chocolate Mousse

Thanksgiving only two days away! If you are still looking for a simple yet elegant raw dessert to crown your festive menu, this might be it. 


The combination of pears with chocolate was inspired by the Poire belle Hélènè and port wine poached pears with chocolate sauce. 

Ingredients are rather easy to obtain, but you will have to start your preparations today. The pears have to be marinated overnight.

This recipe serves four. If you have a bigger party, double or triple the amounts used.

Ingredients:

for the mousse
  • flesh of 3 ripe avocados
  • 1 cup raw cacao
  • 1/4 cup raw honey (or maple syrup if you want to go fully vegan) 
  • 1 Tbsp organic vanilla extract
  • pinch pink Himalayan salt  
  • 2 ripe but firm pears (I used Bosc pears) 
  • freshly pressed juice of 1 lemon
  • 2 Tbsp raw honey (or maple syrup)
  • 1/2 tsp vanilla extract
  • 1/2 tsp cloves
  • 2 tsp cinnamon 

Marinated Pears In Raw Chocolate Mousse

Method:
  • In a small bowl mix lemon juice, honey, vanilla extract, and spices. Set aside.
  • Wash and peel the pears with a vegetable peeler. Cut the pears into quarters. Remove the stem and the core. Place the pears in a dish. Pour the marinade over the pears. Cover the dish and place it in the refrigerator. 
  • Every few hours remove the dish from the fridge and gently turn the pears around making sure that they are well saturated with the marinade. If time allows, leave the pears in the fridge overnight. The pears should feel as soft as if they were poached and easy to cut with dessert fork or spoon.
  • In a blender whiz avocados with raw cacao and all the other mousse ingredients. Do not over process. You want the mousse to be more like a pudding than smoothie. Chill the mousse in the fridge for 15-20 minutes before serving.
  • Portion out chocolate mousse into individual bowls. Add two pear wedges to each bowl and serve right away. Enjoy in good in good company!
