Frozen Snowflake New Year's Blue Smoothie

I hope that everyone had a very good start into a New Year. I am in celebratory mood despite the cold weather here in Roswell. To match the mood and the outside temperatures, I made a delicious smoothie and hope you will have a chance to try this recipe. It is very simple. You only need a few ingredients. 


~ Frozen Snowflake New Year's Blue Smoothie ~

Ingredients:

for the smoothie
  • 3 cups Thai style coconut milk (make your own if you can)
  • 2 ripe bananas
  • 1/3 cup raw vegan protein powder
  • 1/3 cup raw coconut flakes or frozen meat of young coconut
  • freshly pressed juice of 1 lime 
  • pinch Celtic sea salt to balance the flavors
  • a few ice cubes (optional)
  • 1/3 cup dried Thai blue butterfly pea flowers

for garnish
  • 1/4 cup coconut flakes
  • 1 Tbsp lime juice


Method:
  • Pour coconut milk into a jar. Add dried butterfly pea flowers and let them sit in coconut milk until the milk turns indigo blue. 
  • Meanwhile, dip your smoothie glasses in lime juice and in coconut flakes to make decorative rims.
  • Remove the petals from the bowl and transfer the blue milk into a jar of your blender.
  • Toss chopped ripe bananas into the blender. Add coconut flakes, protein powder and lime juice, and blend until all ingredients are well combined. Add ice cubes if you want to. Add pinch of salt and blend again. Adjust the taste as needed. If the smoothie is too thick, add a little purified water.
  • Pour your blue smoothie into decorated glasses and enjoy it in good company!


Tip: If the exotic blue butterfly pea flowers are hard to come, you can create the blue effect by simply blending a handful of blueberries with rest of the ingredients or adding a little blue spirulina powder. Just a little to get the light, icy blue effect.
