This is a quick and easy salad that I love to take with me whenever I travel. It can be made ahead and there is no need for any extra dressing. It is very refreshing and nutritious, and is a wonderful alternative to the food that is normally served on the airplane.
I love to use purple carrots in this recipe because they are rich in anthocynins and other antioxidants that provide protection against free radicals. If purple carrots are not available I use beets.
For a balanced nutrition I added a generous amount of raw hemp seeds. Hemp seeds are great source complete protein, Omega-3 fatty acids, vitamins, minerals, chlorophyll and fiber. They provide energy, prevent inflammation and help stabilize the blood sugar. This is important when you travel.

Ingredients:
- 2 large purple carrots, shredded
- juice of 2 limes
- 1/4 cup virgin olive oil
- 1/3 cup chopped fresh mint leaves
- 1/3 cup raw pistachios
- 1/3 cup hemp seeds
- 1/2 tsp pink Himalaya salt
- freshly ground black pepper to taste
Method:
- In a large bowl mix all the ingredients together. Adjust the taste to your personal liking and serve. As always, enjoy in good company!
