This dressing is like a nutritious raw dish or a spicy summer soup. With some small variations it can probably be eaten as such. Simply adjust the amount of liquids to suit your taste and voila!
Ingredients:
- 1 bunch cilantro
- 1 medium tomato
- 1 large avocado
- 1/4 cup chopped red onion
- 1 garlic clove
- 1 jalapeno, seeds removed
- 1/2 cup fresh lime juice
- 4 Medjool dates
- 1 Tbsp virgin olive oil
- 1/3 cup unsweetened rice or oat milk
- pinch Celtic salt
Method:
- Place all ingredients in a blender and process on a high speed until smooth.
- Enjoy in good company on salads and other raw food dishes.
