Super-Nutritious Salad Dressing with Avocado

This dressing is like a nutritious raw dish or a spicy summer soup. With some small variations it can probably be eaten as such. Simply adjust the amount of liquids to suit your taste and voila!

  • 1 bunch cilantro
  • 1 medium tomato
  • 1 large avocado
  • 1/4 cup chopped red onion
  • 1 garlic clove
  • 1 jalapeno, seeds removed
  • 1/2 cup fresh lime juice
  • 4 Medjool dates
  • 1 Tbsp virgin olive oil
  • 1/3 cup unsweetened rice or oat milk
  • pinch Celtic salt

  • Place all ingredients in a blender and process on a high speed until smooth. 
  • Enjoy in good company on salads and other raw food dishes.
