Virgin Frozen Cucumber Margarita


This is a non-alcoholic variation of a classic Margarita cocktail recipe. It is believed that this popular cocktail was created in Mexico in the 1930s for the prohibition-escaping Americans who were often ordering brandy daisy cocktails normally consisting of brandy and citrus juice. A daisy is called margarita in Spanish. The cocktails were cleverly re-named and made with tequila as the base and fresh lime juice. The classic margarita recipe would also contain orange-flavored liqueur (triple sec) such as Cointreau or Grand Marnier.

There are many variation of the classic margarita, frozen cucumber being just one among many more or less exotic ones. For an extra kick you can use jalapeños in this recipe. I decided to add finger limes since I still had some in my fridge.  

~ Virgin Frozen Cucumber And Finger Lime Margarita ~

This is a perfect cocktail for any summer garden party or brunch. It is very easy to make. It resembles a slushy in texture. You will have to freeze the chopped, peeled and de-seeded cucumbers as well as the finger limes, so plan ahead. Allow the frozen finger limes to thaw just a bit before processing so that it will be easier to squeeze the caviar pearls out of them. To get the caviar out, cut the finger lime in half and then press each half between your thumb and the index finger.  

 

Ingredients: 

  • 1 cup frozen chopped cucumber, per person
  • 3 semi-frozen finger limes, per person 
  • freshly pressed juice of 3 limes, per person (about 50 ml) 
  • 2 Tbsp freshly pressed juice per person, optional
  • 1/2 - 1 Tbsp agave syrup, optional 

for the rim

  • wedge of lime
  • saucer filled with fine salt

for the garnish

  • caviar pearls of 1 finger lime, per person

Method: 

  • Prepare your glasses. Wet the rim of each cocktail glass with the wedge of lime. Dip each glass in the fine salt to make the decorative rim. Set glasses aside and allow the salt rim to completely dry. 

 


  • In a blender, process the frozen cucumber with lime juice, orange juice and the agave syrup, if using. 
  • Cut each semi-frozen finger lime and squeeze out the caviar into the blender, and blend again. Adjust the taste if needed.
  • Pour the semi frozen cocktail into prepared glasses and serve right away. Enjoy it without guilt in best company! 

 


Note: For a dramatic effect for my photo shoot I piled up the frozen cocktail and the garnish. Try not to do this when you are serving your Virgin Frozen Cucumber Margarita to your guests. On a hot day it will melt rather quickly and it will definitely spill out of your coupe glasses. You don't want this to happen! To avoid spillage, leave about 1/4 inch to the rim. Also, if you prefer to have a slightly less frozen and a little more liquid cocktail, add a cup of chilled sparkling mineral water to the blender and whiz for a second or two. Pour the cocktail to the glasses, garnish it and serve.
