When temperatures go beyond F°96, you definitely need something cooling and nourishing at the same time. This simple raw soup is my go-to dish on any hot day. You only need a few ingredients and a blender. In no time a delicious, cooling soup is ready so you do not even have to spend much time in your kitchen.
Ingredients:
- 2 cups chilled thick nut milk (for best results use pili, macadamia or cashew nut milk)
- 4-5 cups roughly chopped cucumbers (remove the peel and seeds if necessary)
- 1/2 lemon
- 1 tsp lemon zest
- 1/2 cup fresh mint leaves, packed
- 1 small onion, roughly chopped (about 2Tbsp)
- 1 small garlic clove
- 1 Tbsp virgin olive oil
- sea salt to taste
Method:
- Toss all ingredients into a jar of your blender and blend until smooth. Adjust the taste as needed.
- Pour the soup into chilled soup bowls, garnish with fresh mint and enjoy it in good company!
Tip: Non-vegans can make this soup using homemade kefir or raw milk Greek style yogurt.
