Cooling Raw Mint And Cucumber Soup


When temperatures go beyond F°96, you definitely need something cooling and nourishing at the same time. This simple raw soup is my go-to dish on any hot day. You only need a few ingredients and a blender. In no time a delicious, cooling soup is ready so you do not even have to spend much time in your kitchen. 

Ingredients: 

  • 2 cups chilled thick nut milk (for best results use pili, macadamia or cashew nut milk)
  • 4-5 cups roughly chopped cucumbers (remove the peel and seeds if necessary)
  • 1/2 lemon
  • 1 tsp lemon zest 
  • 1/2 cup fresh mint leaves, packed
  • 1 small onion, roughly chopped (about 2Tbsp) 
  • 1 small garlic clove 
  •  1 Tbsp virgin olive oil
  • sea salt to taste

 


Method:  

  • Toss all ingredients into a jar of your blender and blend until smooth. Adjust the taste as needed.
  • Pour the soup into chilled soup bowls, garnish with fresh mint and enjoy it in good company!

 


Tip: Non-vegans can make this soup using homemade kefir or raw milk Greek style yogurt.
