Raw Chocolate Nice Cream with Berries


Time for a good, and a much healthier, dessert. This one is easy to make. It has no added sugar and is made of raw, organic ingredients. I topped it with blueberries and wild strawberries from my garden. The flavor of the Fragaria vesca strawberries is incredible. I wish I had more berries to make wild strawberry ice cream... Still, just a few berries make the nice cream eating experience quite special. 



Ingredients:   

  • 3 frozen very ripe bananas
  • 1/3 cup raw cacao powder
  • 2 Tbsp raw nut butter (walnut, almond or cashew)
  • 2-3 Tbsp freshly made nut milk (add more if needed)
  • pinch pink Himalayan sea salt  

Method: 

  • Using a high speed blender or a food processor, blend all the ingredients into a smooth, creamy mass. Add more nut milk if needed and blend again. 
  • Portion out the nice cream using an ice cream scoop. Top up each portion with fresh berries and serve right away. Enjoy it in good company!

Tip: You can make this nice cream for later use. Transfer the ready mass into a shallow glass container. Cover the surface well with a sheet of wax paper or non-stick foil. Close the container and place it in the freezer. You may need to take it out of the freezer every few hours and mix the nice cream with a fork each time. Once this is done, simply smooth the surface, cover it again, close the container and place it back into the freezer. This process is a little tedious but it will prevent ice crystals from forming in your nice cream. 

Post scriptum

Only a few days after this recipe was published, I was able to foraged some wild strawberries. Such a nice gift from nature! I might have enough to slightly flavor a nice cream made of banana and macadamia nut butter. The aroma is divine but also very delicate. You do not want to use ingredients that would overpower these tiny berries.
