Kiwi Fruit and Bluberry Salad for the Immune System

Sometimes the simplest things are the best. This is a very quick and easy recipe to support the immune system in the cold season. Make it for the weekend if you have the ingredients. 

It is a well known and researched fact that nutrients in some foods may modulate immune responses in a positive way. Kiwi fruit is incredibly rich in immune-supportive compounds such a vitamins C, E, K and folate; carotenoids; polyphenols; and dietary fiber. Some studies suggest that these nutrients have the potential to reduce the incidence and severity of colds and flue-like symptoms, especially in children and the elderly. 

Blueberries are well known for their health benefits. They are rich in nutrients that may help prevent chronic diseases such as type 2 diabetes and cardiovascular disease. New studies suggest that compounds such a pterostilbene, work in synergy with vitamin D to enhance the immune function. 

Why not take the advantage of the most recent research and make something simple and tasty, like a large bowl of a Kiwi Fruit and Blueberry Salad for breakfast, lunch or dinner. Use organic fruit if you can get some. 

I made this salad using two ingredients only - kiwis and blueberries. I was lucky to get some organic golden and green kiwis, however, this salad tastes great with only one type of kiwi fruit. The golden kiwis are slightly sweeter than the green ones, so mixing them both moderates the acidity for those who do not like the sour taste of the green kiwi fruit.  

Ingredients: 

  • 4 green kiwi fruit
  • 4 golden kiwi fruit
  • 2 cups blueberries

Method: 

  • Peel and slice the the kiwi fruit. 
  • In a large enough bowl gently toss the kiwi fruit slices with blueberries. Add lemon juice and honey, if using. Mix again.
  • Portion out the salad into individual bowls and enjoy in good company!

Tip: You may want to add lemon juice and raw honey for additional health benefits, but this is not necessary.
