Nasturtium flowers and leaves are not only wonderful decoration in the garden but also a delicious addition to any salad. They can also be used to flavor vinegars and oils, or to make a pesto. The marinated green seeds are an interesting alternative to capers.
Nasturtiums are rather easy to grow so give it a try. You can grow them directly in soil or in a flower pot.
Ingredients:
- 2 cups organic nasturtium blossoms
- 3 cups of organic nasturtium leaves
- 1 garlic clove
- 2 Tbsp freshly pressed lemon juice
- 2 Tbsp freshly pressed orange juice
- 5 Tbsp virgin olive oil
- Celtic sea salt and freshly ground black pepper, to taste
Method:
- Trim the stems off the blossoms. Wash the blossoms and the leaves under cool running water. Gently pat dry with kitchen towel. Try not to damage the flowers.
- On a cutting board, smash the garlic clove using a large-bladed knife. Keep the sharp edge away from you to prevent accident. Rub inside of the salad bowl with the smashed garlic clove.
- In a small bowl whisk a simple dressing using lemon juice, orange juice, and olive oil. Add salt and pepper to taste and whisk again.
- Place the nasturtium flowers and leaves in the prepared bowl. Add vinaigrette and toss gently.
- Serve right away and enjoy in good company!
