Spicy Raw Strawberry Vinaigrette

I love strawberries! They are so versatile. I use them in my sweet and savory dishes. I prefer them freshly harvested, but do not mind using frozen ones in some recipes when fresh strawberries are not in season. For this recipe, however, I used freshly picked, very ripe organic ones.


Ingredients:
  • 1 1/2 cup chopped ripe strawberries
  • 1 tsp chopped habanero pepper (very hot!)
  • 1/2 cup virgin olive oil
  • 1/4 cup aged balsamic vinegar
  • 1/4 tsp pink Himalaya salt


Method:
  • Blend all the ingredients until smooth. Adjust the taste if necessary and serve with salad made of leafy greens, wild herbs and root vegetable. Enjoy in good company!

Tip: This is a basic strawberry vinaigrette recipe. The taste depends very much on the quality of your strawberries and the type of vinegar you are going to use. I used aged balsamic vinegar which has a rather sweet taste and low acidity. You may want to use raw apple cider vinegar in this recipe, in fact, I sometimes do, but since apple cider vinegar is a bit more acidic than aged balsamic vinegar, you will have to use a bit less. I suggest that you add vinegar gradually as you blend your dressing and taste it before you add some more. You may want to add some raw honey if you like your dressing to be a bit sweeter. You can add a garlic clove, a teaspoon of mustard or some fresh tarragon. Each ingredient will change the taste of this wonderfully fruity dressing, but each version will be just as tasty. Experiment. It's fun!

Purple Carrot Salad with Fresh Mint, Pistachios and Hemp Seeds

This is a quick and easy salad that I love to take with me whenever I travel. It can be made ahead and there is no need for any extra dressing. It is very refreshing and nutritious, and is a wonderful alternative to the food that is normally served on the airplane. 


I love to use purple carrots in this recipe because they are rich in anthocynins and other antioxidants that provide protection against free radicals. If purple carrots are not available I use beets.

For a balanced nutrition I added a generous amount of raw hemp seeds. Hemp seeds are great source complete protein, Omega-3 fatty acids, vitamins, minerals, chlorophyll and fiber. They provide energy, prevent inflammation and help stabilize the blood sugar. This is important when you travel.

Ingredients:
  • 2 large purple carrots, shredded
  • juice of 2 limes
  • 1/4 cup virgin olive oil
  • 1/3 cup chopped fresh mint leaves
  • 1/3 cup raw pistachios
  • 1/3 cup hemp seeds
  • 1/2 tsp pink Himalaya salt
  • freshly ground black pepper to taste


Method:
  • In a large bowl mix all the ingredients together. Adjust the taste to your personal liking and serve. As always, enjoy in good company!

Strawberry Mint Smoothie

Strawberries are in high season now and I am using them almost daily in my raw food recipes. It takes only a few minutes to whiz a wonderful smoothie. All you need is to gather ingredients of your choice.


Make sure, though, that you are using organic ingredients whenever you can, especially strawberries. Tons of pesticide are sprayed on this fragile fruit to protect the interests of agribusiness. To protect your health make sure yours are pesticide-free.

Ingredients: 
  • 2 cups ripe strawberries, hulled 
  • 2/3 cups fresh mint leaves
  • 1/3 hemp protein
  • 1 cup coconut water (use spring water if you prefer)
  • 2-3 ice cubes 
  • a few mint leaves for garnish


Method:
  • Place all the ingredients in the jar of your blender. Whiz until smooth.
  • Pour smoothie into glasses and garnish with fresh mint leaves. Enjoy in good company!

Tip: I used very ripe strawberries so my smoothie was sweet enough. If you need to add any sweetener at all, use a few drops of liquid stevia or a teaspoon of raw honey. Also, if hemp protein is hard to come by, use unflavored raw protein or ripe banana.

Healthy Pineapple Juice

Pineapple is one of my favorite tropical fruits and I often drink freshly pressed pineapple juice. I use very ripe fruit and serve it in chilled glasses. 


Pineapple comes with many health benefits. This delicious tropical fruit is rich in vitamin C, manganese and copper. It contains bromelain that is known for its anti-inflammatory, anti-coagulant and anti-tumor properties. Pineapple helps improve digestion and strengthen the immune system. It may also protect against macular degeneration.

To increase health value of this delicious juice I love to add other beneficial ingredients. In synergy they help improve digestion, fight inflammation, and strengthen immune system. 

Ingredients:
  • 1 ripe pineapple, peeled and chopped
  • 2 inch chunk fresh ginger root
  • 2 limes (juice with peel if they are organic, but remember to wash properly)

Method:
  • Pass all ingredients through a juicer. Serve in chilled glasses and enjoy in good company!


Tip: You can increase the nutritional value of your juice by adding different fruits, vegetables and herbs. There is no limit to your creativity. Also remember that you can always re-use the juice pulp that remains after juicing. Make raw cookies, add to a smoothie or make raw ice cream. Experiment. It really is fun!

Raw Cucumber Pasta with Wild Garlic Pesto

Most people I know buy ready-made wild garlic pesto. Unfortunately even the best product on the market is not raw.

Wild garlic, also known as bear garlic or ramps,  grows in early spring and in May the season is almost over. You can still find some in specialized grocery stores, but if you want to forage it, you might be a little late. 


I must admit that I foraged my wild garlic in mid-April and had this recipe almost ready for publishing last month, but something came up and I decided to share other recipes first.

Wild garlic has an intense garlic smell, but a much milder taste. Wild garlic (Allium usrinum L.) has almost all of the benefits of cultivated garlic, but it is slightly weaker in action. Like its cultivated cousin it has antibacterial, anti-fungal and anti-viral properties. It can lower blood cholesterol, improve digestion, help heal respiratory diseases and expel excess water from the body. Leaves and bulbs can be consumed cooked and raw. Flowers are also edible. 


Ingredients: 
  • 1 cup chopped wild garlic leaves, packed
  • 1/3 cup hazelnuts, soaked in water overnight
  • 1/4 cup virgin olive oil
  • 1/4 cup freshly pressed lemon juice
  • pinch Celtic salt to taste
  • 1 large English cucumber for the pasta
  • freshly ground black pepper to taste (optional)


Method:
  • Place all the ingredients in the bowl of a food processor and pulse until you have a slightly coarse pesto. Add more olive oil and lemon juice if you find your pesto a bit too thick.
  • Make pasta using a spiralizer or a vegetable peeler. 
  • Portion out the pasta on pasta plates and top it with a dollop of pesto. Add freshly ground black pepper and enjoy in good company!


Tip: You may also add the bulbs of wild garlic to this recipe. Do not add too many 3 or 4 would be sufficient. Also remember that raw pesto does not store indefinitely. Make small batches and use it within 3-4 days.

Healthy Superfood Smoothie

Smoothies are probably the best and easiest way to add supefoods to your diet. A little goes a long way since superfoods are incredibly rich in nutrition. They provide not only vitamins and minerals, but also phytonutrients that may strengthen immune system and protect the body from premature aging and disease.


Ingredients:
  • 1 cup fresh strawberries
  • 1 avocado
  • 1 cup fresh spinach
  • 2 inch chunk fresh turmeric root, chopped or grated
  • 2 very ripe bananas
  • 1 1/2 cup coconut water
  • 1 Tbsp virgin olive oil
  • 1/3 cup hemp flour
  • 2 tsp açai powder
  • 1 tsp reishi powder
  • 1 tsp baobab powder
  • 1 tsp camu camu powder
  • 1/2 tsp probiotic powder
  • pinch Celtic sea salt
  • 3-4 ice cubes (optional)
  • 1/2 tsp bee pollen for garnish


Method:
  • Put all the ingredients into a blender and process until smooth and creamy.
  • Pour the smoothie into glasses. Garnish with bee pollen and enjoy in good company!
You can make this smoothie without superfood powders. Strawberries, spinach, and turmeric are live superfoods. They are perfect just the way they are, but if you want to address certain health issues, adding concentrated superfood powders makes a lot of sense sense. Listen to your body and use common sense.

Super Healthy Antioxidant Juice

This is one of my favorite juice recipes! I make this juice as often as I can to protect my body from the free radicals and to add a healthy glow to my skin. As you will see, I added argan oil to the mix. Fat is necessary for the absorption of fat-soluble vitamins. It plays many vital functions in the body, including brain health and cognition. Keep this in mind.


Argan oil, also called the Moroccan gold, is very rich in Omega-3 fatty acids, vitamin E and other potent cancer-fighting compounds. Research shows that this oil can help lower lipids in blood, stabilize blood sugar, improve blood circulation, ease inflammation in the body, support the immune system and prevent cancer.

Ingredients:
  • 10 carrots
  • 2 blood oranges
  • 1 inch chunk ginger
  • 1/3 cup fresh turmeric root (use more if you like the taste)
  • 1/2 Tbsp cold pressed argan oil (use virgin olive or cold pressed flax oil if you prefer)

Method:
  • Pass all solid ingredients through a juicer. Add argan oil. Stir well.
  • Pour juice into glasses, add ice cubes if necessary and enjoy it in good company!
